A crowd was on hand for the annual Taste of Madison event held Monday evening at the Park Avenue Club. Over 100 businesses contributed food, merchandise, wine and other spirits to make the event a succesful fundraiser for the Madison Rotary Club, Madison Chamber of Commerce, and Downtown Development Commission.

Taste of Madison, which is presented by Gary's Wine & Marketplace, is one of the premier wine and food tasting events in New Jersey. Madison restaurant kitchens will be bustling this weekend and on Monday as borough eateries prep their dishes for the annual Taste of Madison Monday night. For chef Robert Ubhaus of Rob's Bistro, his Sunday afternoon will include stewing escargot for several hours in white wine, herbs, celery, carrots, onions and garlic. On Monday, he'll mix the escargot with a basil puree and diced brie, then serve it in a little tart shell at the event. The presentation and preparation "takes away a little of the fear factor" for any attendees who have never tried cooked snail, said Ubhaus, whose classic French bistro is on Main Street. The participating restaurants are set for the annual Taste of Madison, planned for Monday, April 15 at the Park Avenue Club, 184 Park Ave., Florham Park. “We invite you, your family and friends to celebrate Tax Day 2013 at the Taste of Madison.
