Rob's Bistro chef/owner Robert Ubhaus, who learned to cook at a restaurant on Long Beach Island, is inviting restaurants to set up in Madison for a night.
Rob's Bistro on Main Street in Madison is offering any chef or restaurateur affected by Superstorm Sandy the opportunity to use its place to create a "pop-up" restaurant of their concept on a Monday night, when Rob's is normally closed, the restaurant has announced. Proceeds from the pop-up can be designated to the rebuild of the restaurant, the surrounding community, or to a charity of the chef's choice, Rob's said. Rob's Bistro chef/owner Robert Ubhaus, a Chatham resident, learned to cook at The Green Gables in Beach Haven on Long Beach Island in the 1990s, and "wants to help the Jersey Shore come back better than before," he said in a news release. Chef Robert Ubhaus will focus all of his energy on Rob's Bistro.
Resto, the restaurant on Main Street in Madison opened four years ago by chef Robert Ubhaus, is closing and will serve its last dinner on Sunday, Sept. 2, Ubhaus announced in a letter to customers on Sunday. Ubhaus will be focusing all of his energy and will be cooking full time in the kitchen at Rob's Bistro, a restaurant he opened next door. "It is with great sadness, but with no regrets, I must announce the closing of RESTO," Ubhaus wrote. "After four plus wonderful years, we will be serving our last dinner on Sunday, September 2nd. Along the way, we think we have achieved some extraordinary things, including critical acclaim, but more importantly, the ability to serve you some incredible dishes and call many of you our friends. While …

Possibly some kind of potato salad. "They just looked good," Ubhaus said. Weekly trips to farmers' markets in Madison and Chatham, where he lives, keep things interesting for Ubhaus and his customers. The walk from his Main Street restaurant to the Madison market on Waverly Place takes about a minute. This week, among the fresh produce he bought from the Vacchiano Farm tent were young fennel, spring onions and flat beans. Back at his restaurant, with the help of line cook Christian Raho, a Madison High School senior, vegetables were sliced, water was …
